Spaghettini at Brunei Empire Hotel

SPAGHETTINI, one of the best authentic Italian Restaurant in Brunei Darussalam. Its located at Level 6 in the Main Atrium Building at Brunei Empire Hotel. To me its the most romantic restaurant in town. Wish to dine in here with someone special in future. It was my honor that Joe , the sous chef for this outlet willing to share hes cooking knowledge with us.

"Teaser" is not only important in your relationship but also in your dining menu hehe. L- orange, the teaser/amuse bose to start our dinner.
Nice ambiance so for sure its the perfect place for you to bring your date. 



After teaser we have bread as starter. We ordered two rounds coz the breads are just perfect with butter capcicum and anchovies, olive butter & pesto butter. Add a little bit of salt on it, wowowo finger licking.



Then we have our soups for our second course. Theres three different types of soup. Awesome isnt it. Below is the garlic bread with empire sign pin. So cute!!!



This one is the Tomato Tortilla soup.  There's tortilla, avocado and fresh tomatoes . Vegetarian will love this soup.

Sorry I do not have closer pic of the other 2 soups so I'll only use words to describe them hehe. Next to the tortilla soup is the lobster bisque with the gost cheese spring roll. Next to it is the mushroom cappuccino. Reason its been called cappuccino is because the recipe is exactly the same as the cappuccino itself which is 80% cream and 20% mushroom. You need 4 hours to prepare this dishes. So must appreciate every sip you have. Do you notice the bubbly on the mushroom soup? Its thymefoam ( Thyme herb to foam) with mustard custard dip inside. Theres actually 3 types of mushrooms : button mushroom, sap mushroom and the most important mushroom - white truffle mushroom.


 From right its the smoke duck ragout with portabella mushroom source . Middle is the scallop mousse with salmon egg while tomato salsa at the bottom. This is definitely MAMAMIA. When I tasted it my heart melts hehehe. Left is the Mr Chocolate Tiger Prawn with mango salsa and snow pea sprout. The prawn is marinated in 24 hours in dark chocolate then fry it. Why its matched with mango ? Well thats to get the sweet taste from the mango and the same time to bring out the sweetness from the prawn itself. Trust me, this is definitely the sweetest prawn I ever tasted. Then we have olive cracker as deco.
See I am right!! How can the environment not be romantic with this lovely pianist with wonderful and romantic music.

Always my dream to dance with the one I love.Whose my next Mr. Right ? 







4 mini main courses of the night . They look so adorable and delicious for sure. Sorry again that I do not have a clearer pic for each courses. The one that closest to you is the Angus rib eyes. Beside the angus rib eye is the confit potato in brick shape. On top of it is the mustard ice cream. Once it melts, the ribeyes becomes really juicy. Then its the Cod fish on the Angus Rib Eyes left. Its served with sweet potato gnocchi and mussel saffron ragu which is one of the most expensive sources in the world. Avocado salsa on top to balance the taste.

This is the salmon with sea urchin source , all the way from Hong Kong. Under the salmon is the shitaki mushroom while pineapple salsa on top to give refreshing taste for the salmon .

This Confit duck is the dish that been longing by my others friends especially Roy and Alex. They just cant resist it. The duck is con fitted in olive oil for 6 hours then compress it to this shape. I love the bread cum stick. This dishes is one of the molecular cuisine. First time I heard this term.  

I cant finish the desserts coz all the dishes have filled me up till max. Lets see what we have here. (1) Far - Mango creme brulee with frozen mascarpone and honeycomb.(2)Nearest -  White chocolate chantily with vanilla coconut glacee and praline crunchy (3) On right top - Passionfruit cream in chocolate tube with vanilla foam almond cake. 

 Conclusion I had a fantastic dinner. Would be super super lovely if thats a romantic dinner with a special one. Im sure this place will be fully booked during Valentine's day. So couples do hurry up before its too late hehe.
